I’m obsessed with this recipe that I’ve been making on repeat, so wanted to share it with you all! You may have seen me post about it a few weeks ago on instagram, but it is truly my favorite breakfast these days. This recipe is super easy to make and tastes amazing! I have made it time and time again over the past few months. I can even file this under Bae-Approved meals, which is a huge win in this house.
Recipe:
1 cup all-purpose flour
⅓ cup @bobsredmill Almond Protein
1 tablespoon baking powder
1 tablespoon cinnamon
1/2 teaspoon salt
1/4 cup maple syrup or your favorite sweetener
2 tablespoons coconut oil, melted
1 cup fave non-dairy milk
1 tablespoon oil for cooking
Instructions:
Step 1: In a large bowl, mix all dry ingredients. Make a well in the center, and pour in milk, and oil. Mix until smooth.
Step 2: Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
When it comes to making pancakes, I have a few different mixes I really like to rotate through that are really amazing. They make it SO easy to make the above recipe because I’ll add the almond protein to this mix and it’s so quick. You can always make these from scratch, but if you’re in a hurry just add the Almond Protein to the mix plus a bit of non-dairy milk. I also love this pan from Amazon to make the pancakes look perfect every time.
